During our routine shopping to an Oriental grocery store at Foster City, I saw this lady selling enoki mushroom. I already grabbed a pack of white button mushroom and there’s something about her mushroom that makes me want to try it. I love mushrooms: button mushroom, canned mushroom, winter mushroom,  dried mushroom, rat’s ear mushroom (“tenga ng daga”)and now enoki mushroom.

Enoki mushrooms , also called golden needle mushrooms, have a mild but delightful flavor and a pleasantly crunchy texture. They are rich in Vitamin B1, B2, and E. They contain flammulin which is found to be anti-cancer and anti-tumor growth. It can stimulate the immune system boosting up the body’s defense against virus and bacteria. It also reportedly can lower blood pressure. These are great benefits for such a small thing!

So here’s how an easy way to cook it:

1. Cut off the mushroom stems from its root. Wash the mushrooms.

2. Heat a saute pan, put small amount of cooking oil. Saute the mushroom.

3. Add a spoonful of oyster sauce.

4. When mushroom is tender (few minutes), turn off the heat and serve.

You can add other vegetables into the dish. For me I saute spinach (that’s an additional iron nutrient in your dish!) with the mushroom. Sometimes green onions too.

It’s a very quick and simple dish to make and is very delicious and nutritional! :)
