This recipe will tweak your ordinary quaker oats into a delicious and sophisticated dessert/pastry. It’s very easy to do and has lots of nutritional value (Quaker oats – anti-hypercholesterol; Blueberry – antioxidants).

I tried this before and it came out nicely although a 2-quart rectangular dish would have a really good presentation (I used a flat pie dish). I love the texture and sweetness of the blueberry and the cooked oats make it feel like you’re eating a granola bar. Tip: When it’s still warm, you can slice a serving and top it with vanilla ice cream – yumyum!!!!

EASY BLUEBERRY CRUNCH

  • 4 cups fresh blueberries (can be frozen blueberries, but make sure to defrost to room temperature)
  • 1 cup firmly packed brown sugar
  • 3/4 cup flour
  • 3/4 cup uncooked oats (better if old-fashioned oats for nutritional value)
  • 1/2 cup butter melted

Directions

  1. Preheat oven to 350 degrees.
  2. Place blueberries in a 2-quart baking dish and spread out evenly.
  3. Combine remaining ingredients and sprinkle over blueberries then bake for 45 minutes at 350.
