Now that there are only 3 people in the house at the moment, we have lots of leftover rice. Since I’ve always cooked Chinese fried rice, I decided to cook a different version, the thai fried rice – Pineapple fried rice. I remember eating in a Thai restaurant and simply gorging myself with their Pineapple fried rice. It was so delicious. I thought I can reinvent it in my home. I love pineapples cooked in the dish. When Walgreens had discount on pineapple canned goods, I stocked up. For the next few days I cooked meals with pineapples in them – sweet and sour chicken and pineapple fried rice. I will be doing potato salad with pineapple next.

But here’s how my Pineapple fried rice went:

PINEAPPLE FRIED RICE

Prep Time: 5 minutes
Cook Time: 7 minutes

Ingredients:

1 cup small cooked shrimp

1 cup shredded cooked chicken

1 cup pineapple chunks, drained

1/2 carrot, grated

1 red bell pepper, diced

1 green onions, chopped

1 tsp minced garlic

1 tsp minced ginger

2 cups cold cooked rice or leftover rice

2 tbsp soy sauce

1 tsp curry powder

Sugar, to taste

Directions:

  1. Heat wok with oil over medium to medium heat. Note if you haven’t cooked yet the shrimp or chicken, do those first before you cook the rest. Add ginger, garlic to the pan and stir-fry for 30seconds. Add onion and stir fry for another 1 minute. Add bell pepper, grated carrot, shrimp, chicken, and pineapple in that order with 30 seconds of stir-frying in between ingredients.
  2. Add the rice and continue  tossing and stirring until it takes on a sheen/gloss.
  3. Stir in the soy sauce. Toss again.
  4. Stir in curry powder and sugar. Taste and adjust the seasoning if desired.
  5. Sprinkle with green onions as garnished. Another alternative is cilantro.

Since it’s been a long time I’ve last tasted or eaten Pineapple fried rice, I don’t know if my fried rice has similar taste. Guinea pig #1 says that it’s bland. The pineapple lost its sweetness. I guess I should have put more sugar? Guinea pig #2 loves it. Well I can’t trust #2 because she always like to eat whatever I cook her. My verdict: it’s a passable pineapple fried rice. I’ll just put salt or more soy sauce next time. And it’s good if the rice is cooked in pandan/jasmine so there’s that exotic aroma.
