Because of our different work schedules and lunch schedule, we sometimes fail to follow the 12pm lunch time. Usually my younger brother would come home for lunch and we need to whip up something quick for him to eat before he returns for work. I got this recipe from a co-worker who was kind enough to share her lunch with me. I don’t know the name but it sure is yummy.
Colorful vegetable pasta
Ingredients
Spaghetti pasta noodles
1/2 cup garlic, finely chopped
1 pc zucchini, diced
1/2 cup green peas, cooked
1 cup corn
1/2 cup carrot, diced
Salt and pepper, to taste
Grated parmesan cheese
2 tbsp olive oil
Directions:
1. Cook pasta per box’s directions. Drain and set aside.
2. Boil water and cook peas and carrot to soften. Do not overcook.
3. Pour olive oil on a wok/saute pan. Saute garlic for 1 minute over medium heat. Do not char the garlic.
4. Saute the zucchini, then peas, corn, carrot. It is important not to overcook these veggies.
5. Mix the pasta into the pan and add salt and pepper to taste.
6. Serve on a colorful plate and garnish with parmesan cheese. Add garlic bread on the side and enjoy!
As you can see from the picture that there’s meat in the mix. We could never be vegetarians because we just love meat. Anyway I cooked diced spam first before the veggies. You can put any vegetable here. Chopped broccoli will be a great addition. And if the result is bland, just sprinkle with parmesan cheese.
I was able to cook this meal under 30 minutes! Wow, I can actually give Rachel Ray a run for her money.
