I’ve gone without breakfast for a week and my stomach growls at work before lunchtime. I usually eat bread with cream cheese but I’m too lazy to shop for bread. Anyway, I’ve been eyeing the poor-looking overripe bananas my father left us and decided to make them into muffins. I thought I could do the same banana muffin I did before but I forgot that I used sour cream in that recipe. I don’t have sour cream now. Crossing my fingers that not all banana muffin recipe needed sour cream, I found a recipe on the first try.

So here’s my simple banana muffin recipe taken from allrecipes.com:

BANANA CRUMB MUFFINS

Yields: 12 regular sized muffins

    * 1 1/2 cups all-purpose flour
    * 1 teaspoon baking soda
    * 1 teaspoon baking powder
    * 1/2 teaspoon salt
    * 3 bananas, mashed
    * 3/4 cup white sugar
    * 1 egg, lightly beaten
    * 1/3 cup butter, melted
    * 1/3 cup packed brown sugar
    * 2 tablespoons all-purpose flour
    * 1/8 teaspoon ground cinnamon
    * 1 tablespoon butter

1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

1.  Add 1tbsp vanilla, 1 tbsp cinnamon, 1 tbsp nutmeg to the batter.

2. For the crumb topping, it’s ok if you don’t top the whole surface with the crumb. The crumb will spread out during baking.

3. I find it a little bit not as sweet as I want it to be, so maybe if you have a sweet tooth, you can increase the sugar to 1 cup. I also divided the sugar into brown and white.

Now that I made this, it’s already weekend when I don’t have any work. Come Monday, I won’t have breakfast again. Oh well~
